Joe likes to eat a lot. He also likes to eat lots. I try to cook nutritious, semi-delicious, and often unburnt food. Joe, a former veggie-hater, is even requesting spinach and eggplant on occasion (not together, however.) I often try and modify new recipes to meet our family's dietary needs (no peanuts or tree nuts) and taste preferences.

Raspberrymuffins
2 large egg
1 c. milk
1/2 c. vegetable oil
3 c. whole wheat flour
1/2 c. honey
1/2 c sugar
4 tsp. baking powder
1 tsp cinnamon
1 tsp vanilla
1/2 tsp nutmeg
1/2 tsp. salt
1 clamshell raspberries (about 1 1/2 c)
Beat liquid ingredients together. Add dry. Mix until moistened but lumpy. Fold in fruit. Bake at 400 for 18 minutes
You could use all honey, or another fruit. I like the texture of the oats, but if you don't, feel free to leave them out. Delicious...and fairly nutritious.
